How To Taste Wedding Cake

At ECBG Cake Studio we do over 100 cake tastings a year. As the owner and ring leader of ECBG, I conduct a LOT of tastings and talk to A LOT of engaged couples about cake. I absolutely LOVE getting to know the personalities of the couples I meet with and I love learning about their dream wedding cake. They describe to me their vision, they talk about their desires, their likes and dislikes, and we spend a lot of time brainstorming on Pinterest!
Sometimes couples come in and have their whole mood board organized and prepared. They’ve taken notes on preferred flavor combinations and already have a topper bought! Sometimes couples have never thought about a wedding cake before in their lives. Most of the time the bride-to-be is leading the conversation and most of the time their soon to be spouse smiles and says, “Yes whatever you think!” In which I always respond, “Good answer!”
Here is what I like to suggest as you prepare to start thinking about your wedding cake!
Do some research about available bakeries
Do a simple search, or even talk to friends about bakeries in your area. See if there are any styles you fall in love with. Some artists have very distinct styles, and if you do as well you might want to try to find someone who vibes with your vibe!
Reach out well in advance to be sure they have your wedding date available
At ECBG we book up pretty far in advance. Saturdays are a hot commodity, so if you know you want it, grab it!
Schedule a wedding cake tasting
At ECBG we provide a FREE wedding cake tasting, so come on in and try some cake on me! If nothing else, we will have a great time chatting and snacking on sweets.
Wedding cake is usually priced by the serving and tiered cakes are more per slice than sheet cakes
Most couples get a tiered cake(the pretty one they cut for the pictures) based on what they love design-wise to feed a percentage of their guests, and then feed the remaining guests with sheet cakes. The size of the tiered cake can serve any number of guests you need them to. For instance, you can choose a 3 tiered cake to feed 100 or a 3 tiered cake to feed 40. People make this choice based on cost and/or style preference.
Before you come, keep in mind there are certain questions I will be asking you:
- How many people are you hoping to feed with your cake?
- Will cake be served at each person’s seat or will it be served on a table for them to serve themselves? (This is important because you may not NEED as many servings as you think)
- Have you seen anything on the internet, or at another friend’s wedding that you have loved in terms of style?
-What flavors are you usually drawn to?

My whole professional purpose comes to fruition when I receive the photos of the couple tasting their wedding cake on their wedding day. This magical cake moment is what it is all about! This is the first act the couple is doing together as a union. They are celebrating their love with this indulgent dessert that they designed and chose together that represents the two of them equally. This dessert item, which is so much more than dessert is meant to represent and celebrate the most important day of their relationship. It is my job to make sure I did their vision justice in the most delicious and beautiful way!
